Breakfast Quesa-Taco
Is it a quesadilla? Is it a taco? I’m not really sure, but it sure is yummy! I created this hybrid breakfast/brunch last Saturday using leftovers from taco night and it was SO delicious. You have to try it.
I aim to keep all of my cooking as healthy as possible, but this one is definitely a little bit of a splurge. However, I always use the highest quality ingredients. It’s okay to be indulgent (in my opinion) if you’re using organic, grass fed/finished meats, etc. So, here’s my recipe. Try it out and let me know what you think!
Ingredients:
- 4 eggs
- splash of half-and-half
- 2 tortillas (I used Mission Organics. I’ve tried gluten free tortillas and they just don’t hold together! If you have a brand you recommend, please let me know!)
- 1 avocado sliced
- 1/2 cup mexican blend cheese (I use Organic Valley)
- 1/2 – 1 cup Pico de Gallo ( I use the Pioneer Woman’s recipe It’s so easy and delicious. I probably make this once a week just to have around for snacking.)
- 1 tablespoon reserved bacon grease
- 1 tablespoon butter
- Lime
- Salt
- Pepper
Directions:
Mix together eggs, half-and-half, salt, and pepper in a bowl. Add 1 tablespoon of saved bacon grease (if you don’t have reserved bacon grease in your fridge, you ain’t Appalachian) or grass-fed butter is fine or coconut oil for the rest of you. Shew. I can’t please everyone! Next, scramble your eggs!
In a separate skillet, add 1 tablespoon butter. Add your tortilla. Sprinkle 1/2 of your cheese on top and let it melt. Once it has melted, remove.
Now to assemble, add your eggs on top. Next add your pico de gallo. Top with avocado slices. Fold in half so you can pick it up like a taco! Squeeze some lime juice on top and Voila!!!
You can always add or take away ingredients. I think next time i make this I will definitely cook some bacon to crumble on top of the eggs. If you need more cilantro or jalapeno than what the pico offers, then throw that on as well. My husband would probably want a big dollop of sour cream on top of his. Make it your own!
